The easiest way to cook a Christmas pud is in the microwave, but take care when heating as overheating can cause the sugar and fruit to burn and then ignite! Steaming is time consuming but definitely results in better flavour and texture. Add your own twist to your pud with a slug of your favourite spirit or fruit liqueur (Grand Marnier, Calvados etc.)before you ignite it.
To take a flaming pudding to the table, heat the tipple in a small pan or ladle, pour it over the pudding then ignite it. To ensure it will light, both the alcohol and the pudding should be hot.
